Welcome to Italian Kitchen

I am now working in Italian Kitchen.. A fine dining restaurant with Russian, South african, Bulgarian, Filipino, Brazilian, Indonesian, Purtugues and Italian servers. I am happy working with this people they are all positive when it comes to service.

In this kitchen for sure I will learn a lot of  food preparation or cooking techniques. As we all know Italian cuisines is one of the most popular and said to be the best. Pasta as their specialty for sure are so many vareities that i am excited to learn. I heard about these raviole. Gnoche, truffle mushroom etc. I will give you updates what are those and how they are prepared and used in the Italian kitchen.

If in case the chef decided to move me from there for sure I will be very sad. as Italian is my second beloved people.

Dried Grapes, Muscatel

We have a lot of grapes inside the fruit fridges, Most of the time some of them are getting spoil and its difficult to preserve as fresh for long  period of time. Because of this the chef decided to use the grapes that is about to spoil to use and make a dried grapes muscatel. We use this dried grapes in a Chess platter. We are serving the chess platter usually with 5 different chesses, mustard, bread crackers, nuts and this muscatel.

Since then we never had a spoil grapes.. Muscatel can last for up to a month or more. Its easy to make dried grapes.

Select the grapes that is about to spoil, that is something soft
Put it in a tray,
Spread olive oil on the grapes.
Put salt and sugar
Let it dry under the heating lamp or under the heat of the sun.
When its dry already take and keep it in a nice covered container.

Mayonnaise

As we all know mayonnaise is commonly served as a spread in a sandwich and a dressing in the salad. Most people also are using Mayonnaise as a base in making another sauce like tartar sauce, cocktail sauce, etc.

I know most of us are used to the mayonnaise that can be bought in the Grocery, But do you know that making mayonnaise is very easy. We just need a few basic ingredients, a mixing bowl, whisk or fork for stirring.
Here is how:

we need the following:
5pcs egg yolk
1 cup of oil
2 tbsp mustard (optional)
salt
white pepper
water

Put the egg yolk and mustard in a mixing bowl mix it by whisk or fork then while mixing add the oil slowly until you get a nice consistency. Add some salt and pepper to your desired taste. Add a little water if in case the mayonnaise is too thick.
Sometimes the process makes difficult if we didn't mix the ingredients nicely because it breaks. like the oil separate with the water and this is not nice.

We can also use electronic blender but make sure you have control with the speed of the blending.

How to make Sushi

Sushi is made from Japanese rice cooked and flavored with vinegar salt and sugar, rolled with seaweed and topped with vegetable, fruits, sashimi etc.
There are different types of sushi.
Nigirizushi
Makizushi
Oshizushi
Inarizushi
Sukeroku
Chirashizushi
Narezushi
Western-style sushi
And Western style sushi comes in different varieties. like California maki,Philadelphia roll etc.

This Types of sushi differ from the way of preparation to the filling they put on it. But the basic is the rice and its flavor. Nori sheet and bamboo mat are very important in sushi preparation.

a. cook the rice as normal rice cooking
  1kg Sushi rice
  1 L of water
b. boil the following just to dissolve the sugar and salt
  150 ml vinegar
  125 g sugar
  30 g salt

Once the rice is cooked, add the mixture b to the rice. Make sure not to broke the rice while mixing.
Cool down the rice and its ready to roll.

Yorkshire Pudding

Roasted beef is the best if you eat it together with a Yorkshire pudding. This is the guest said one time I was in the carving station one Friday Brunch (breakfast and Lunch buffet) in my previous hotel.
Its very easy to make as a matter of fact we do it like 5 minutes before the buffet start. This is how to make it.

Mix 500ml milk, 1 cup of flour and 5 pcs. egg.
preheat the oven to 170 degree and put the molder inside with oil on it.
Pour the Mix( Yorkshire batter) into the molder and let it cook for around 10 minutes. depending on your desired color.

Yorkshire pudding originate in Yorkshire England, Yorkshire Pudding was originally used as a first course filler for poor people who could not afford much meat. Years ago, when the meat was cooked on a spit or trivitt, the batter was put underneath and the fat and meat juice dripped onto the batter. If there wasn't enough meat to go around the children would get Yorkshire pudding and gravy as their main meal. Now the dish is almost always served with a roast beef main course to form part of a 'traditional English dinner'. In its home county, it is often served on its own filled with onion gravy so that it acts as a form of edible soup bowl. This practice probably originated with people who could not afford crockery either.

Sushi and Sashimi…. Am I required to eat?

Am I required to eat Japanese food like sushi and sashimi?  To be honest I do not like these SUSHI and SASHIMI but what to do? I cannot say no. For almost 3 weeks of working in a Japanese kitchen almost everyday they are asking me to try these food. Of course I tried but I didn't eat all just 1 bite and I hide and then i throw. I do not know,the taste is just okay for me but my mind doesn't like it.
As we all know Sashimi's are fresh raw seafood, That is why I do not like it. Served with only a dipping sauce depending on the fish, and simple garnishes such as shiso and shredded daikon radish. And the Sushi the reason why I do not like it is because of the way of preparing it using the bare-naked hand. because sushi cannot be make nicely if you are wearing hand gloves or plastic glove. I eat a lot of sushi if I am the one who made it but if somebody else? never mind. It's always in my mind these is the reason why I do not like some of the food. Its not only the taste but the way of preparing the food is big deal for me.

Tomato Bouquet

Everyday I need to make this food decoration we call tomato bouquet, some chef they call it bonsai… This is a cherry tomato wherein we make a small hole to remove the seeds then we put some mix cress, some rocket leaves, and lolo rosso. Its very easy to make. This is not just a decoration this can be eat also because we put dressing on it. Like the one in the picture.. its smoked salmon with cucumber relish, yogurt with caviar and the tomato bouquet.
