I love to see empty plate in the diswashing area, It just mean that the guest likes the food he ate.
Before when we are very busy I am not able to taste the food I am cooking specially when the chef is giving too much stress and asking to give it to him right away. But then I learned from it. Guests are more important than the stress of the chef.
Tasting the food that we cook for the guest is very important, Actually during the engedients preparation we are checking and choosing the best one. We cook it the best we can and serve it the best we can. Good food presentation will be tempting for the guest but the taste of the food will be love by the guest.
